Ingredients

For the chicken

  • 1.5 lbs (680 g) boneless, skinless chicken thighs, cubed
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 2 tsp salt
  • 1 tsp black pepper
  • 1 tsp gochugaru (optional)
  • 1/2 cup cornstarch, plus more as needed
  • 2 tbsp avocado oil
  • Neutral oil, for pan-frying (amount not given)

For the chili crunch glaze

  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp honey
  • 2 tsp sesame oil
  • 1 to 2 tbsp Momofuku Chili Crunch Sauce
  • 5 garlic cloves, minced
  • 3 tbsp butter

For serving

  • Jasmine rice (amount not given)
  • Momofuku Chili Crunch (amount not given)
  • Green onions, sliced (amount not given)
  • Sesame seeds (amount not given)

Method

  1. Add the chicken to a bowl with the seasonings, avocado oil, and 1/2 cup cornstarch. Toss until evenly coated. For extra crunch, lightly toss each piece in a little more cornstarch.
  2. In a small bowl or jar, mix the soy sauce, rice vinegar, honey, sesame oil, Chili Crunch Sauce, and garlic.
  3. Heat a generous layer of neutral oil in a pan over medium-high heat. Add the chicken in a single layer. Cook about 4 minutes before flipping, then keep cooking until golden, crispy, and cooked through, about 10 to 12 minutes total. Remove the chicken.
  4. Reduce the heat to low and let the pan cool about 2 minutes. Mix the glaze again and add it to the pan. Cook 1 minute, then add the butter and stir another 3 to 4 minutes until glossy, bubbling, and thickened.
  5. Turn off the heat, add the chicken, and toss. Serve over jasmine rice with chili crunch, green onions, and sesame seeds.

Notes

  • Servings and total time are not stated. Stated cook times are 10 to 12 minutes for the chicken and about 6 to 7 minutes for the glaze, plus prep and rice.
  • Amounts for the frying oil, rice, chili crunch topping, green onions, and sesame seeds are not given.
  • This is a sponsored post for Momofuku Chili Crunch Sauce, described in the caption as chili crunch blended with miso and garlic.
  • The caption had the full recipe, so the video was not transcribed. Nothing was inferred.
  • Family food check: no shellfish, oyster sauce, shrimp paste, or fish sauce listed. No green bell peppers. No fish. No Worcestershire sauce. The full ingredient list of the store-bought chili crunch sauce was not checked, so read the jar label.
