Ingredients

  • 2 1/2 pounds boneless, skinless chicken thighs
  • 2 tablespoons butter, optional, for searing
  • 1/2 cup shoyu (soy sauce)
  • 1/3 cup cane vinegar or white vinegar
  • 1/2 cup low-sodium chicken broth
  • 8 garlic cloves, crushed
  • 3 bay leaves
  • 1 teaspoon whole black peppercorns
  • 1 teaspoon white pepper
  • 1 tablespoon brown sugar
  • @meatmitch whomp seasoning (amount not given), listed for the chicken
  • Crispy fried garlic, for topping (amount not given)
  • Sliced green onions, for topping (amount not given)
  • Garlic rice, for serving (amount not given)
  • 2 tablespoons cornstarch mixed with 2 tablespoons cold water, optional, to thicken the sauce

Method

  1. Season the chicken with your favorite rub. Hard sear in 2 tablespoons of butter for 1 to 2 minutes per side. This step is optional.
  2. Place the chicken in the crockpot. Add the shoyu, vinegar, broth, garlic, bay leaves, peppercorns, and brown sugar. Stir to coat everything evenly.
  3. Cover and cook on low for 3 to 4 hours or high for 2 to 2 1/2 hours, until the chicken is tender and reaches at least 165°F.
  4. Remove the bay leaves. Keep the chicken whole or shred it.
  5. For a thicker sauce, mix 2 tablespoons of cornstarch with an equal amount of cold water. Remove the chicken, stir the slurry into the crockpot, and cook uncovered on high for another 15 to 20 minutes.
  6. Serve over garlic rice and finish with crispy fried garlic and sliced green onions.
  7. Do not add any extra salt until you taste it. The soy sauce already brings plenty of seasoning.

Notes

  • Servings are not stated.
  • A single total time is not stated. Cook time is 3 to 4 hours on low or 2 to 2 1/2 hours on high, plus an optional sear and an optional 15 to 20 minutes to thicken.
  • Crispy fried garlic, sliced green onions, and garlic rice have no amounts.
  • @meatmitch whomp seasoning is listed with no amount. Step 1 says "your favorite rub" and does not name that seasoning, so it was not written into the step.
  • White pepper (1 teaspoon) is in the ingredient list, but the numbered instructions never say when to add it. It was not guessed into a step.
  • The cornstarch slurry is only in the instructions, not the ingredient list. The caption says equal parts cold water, which is 2 tablespoons of water for 2 tablespoons of cornstarch.
  • The Instagram caption (via yt-dlp) included the full written recipe, so the video was not transcribed.
  • Nothing in the method or amounts was inferred.
  • Family food check: no shellfish, oyster sauce, shrimp paste, or fish sauce. Shoyu here is soy sauce. No green bell peppers. No fish. No Worcestershire sauce.
