Ingredients

  • 4 bone-in, skin-on chicken thighs
  • Salt and black pepper (amount not given)
  • 1 tbsp olive oil
  • 1 lb baby potatoes
  • 2 cups baby carrots
  • 1 small yellow onion, chopped
  • 18 to 20 garlic cloves, peeled
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1 1/2 to 2 cups chicken broth
  • 2 tsp fresh thyme, plus more for serving
  • 1/2 cup freshly grated Asiago cheese
  • Fresh parsley, chopped (amount not given)

Method

  1. Heat the oven to 400°F.
  2. Pat the chicken dry and season generously with salt and pepper. Heat the olive oil in a large oven-safe skillet over medium-high heat. Cook the chicken skin-side down for 5 to 7 minutes, until golden and crispy. Flip and cook 2 to 3 minutes more, then set aside.
  3. Reduce the heat to medium. Add the butter, onion, garlic cloves, and thyme to the same pan. Cook 3 to 4 minutes, stirring occasionally, until the onion softens and the garlic is lightly golden.
  4. Sprinkle in the flour and cook about 1 minute, stirring. Slowly pour in 1 1/2 to 2 cups broth, scraping up the browned bits. Bring to a gentle simmer, reduce the heat to low, and stir in the Asiago until melted. Season with salt and pepper.
  5. Add the potatoes and carrots and toss them in the gravy. Nestle the chicken back in, skin-side up, keeping the skin above the sauce.
  6. Roast uncovered for 30 to 35 minutes, until the vegetables are tender and the chicken reaches at least 165°F inside.
  7. Finish with fresh parsley and thyme, and spoon the gravy over everything.
