Tortellini Carbonara

Want a creamy pasta dish that's neither macaroni and cheese nor Alfredo? This tortellini carbonara hits all the right notes when it comes to cheesy goodness, not to mention the bacon. It's decadent, delicious and decidedly easy to make.

Ingredients

  • 1 package (9 ounces) refrigerated cheese tortellini
  • 8 bacon strips, chopped
  • 1 cup heavy whipping cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup chopped fresh parsley

Method

  1. Cook the tortellini according to the package directions, then drain the pasta and set it aside.
  2. In a large skillet, cook the bacon over medium heat until crisp, stirring occasionally. Remove the bacon from the pan with a slotted spoon and set it on folded paper towels to absorb the grease. Pour off the drippings remaining in the pan.
  3. In the same pan, combine the cream, cheese, parsley and bacon, then heat through over medium heat. Stir in the tortellini and serve immediately.
